Carnevino has some of the best beef & meat cuts in the US!
This hugely popular Sin City eatery opened in 2008 at the Palazzo, the third restaurant from Mario Batoli in Las Vegas.
With grand ceilings, Italian marble and wood touches this restaurant is impressive and has a relaxed elegance.
The menu is comprised of fresh and inspiring modern Italian cuisine alongside traditional steakhouse classics.
Menu highlights include Steak Tartare and classic, juicy and mouth-watering house-aged beef steaks rubbed with a blend of sea salt, black pepper and fresh rosemary to achieve a delicious and slightly charred crust.

This is a fine dining restaurant with attentive and exceptional service.
Carnevino located at the Palazzois a HUGE restaurant with 3 rooms and over 400 seats, yet, it still feels intimate and thankfully avoids loud music and noise – rare in Vegas!
I always judge a restaurant by bread and naturally it’s great in this restaurant. The cured pork fat ‘spread’ for the bread is a sensation.
To begin the appetisers are delicious.
A new dish for the Fall is the Scallops with cauliflower puree and stick apple herb salad & apple chips. I could have made a meal of this by itself – delicious.
The signature appetiser at Carnevino is the octopus braised with white wine garlic with chilli’s & limoncello. This one was on the most tender I’ve ever tasted and despite having a kick, it’s packed with flavour!
Finally to begin, the steak tartare ‘Carne Cruda Alla Piemontese’ is a beautiful delicacy with mushrooms Trumpet Royale Mushrooms.
The pasta at Carnevino is highly rated and I tried three of the best.
The lobster pasta was a real treat with tiny chunks of delicious flavour.
Carnevino’s beef cheek pasta with wine and stock was my favourite by a mile. With fresh herbs & balsamic drizzled after serving. Gorgeous texture.
The ravioli ricotta was very unique, not to my personal taste but it’s silky smooth with yolk.
Obviously, by definition, Carnevino is a world class meat lovers paradise. The selection and sourcing is remarkable.
To begin I sampled the Pitman Farms chicken from California – half pan roasted – chicken stock reduction – with a delicious potato mould created over 24 hours. The matchstick apples herb salad tossed in lemon vinegarette finish this off this dish to perfection.
The mascarpone mash with fresh herbs, bacon & soft poached egg is maybe one of the most glorious, decadent and indulgent things I’ve EVER tasted.
Good Lord – I’d come back just for that!
The sauted spinach was beautifully presented and a perfect addition to the chicken.
So, to the steak (DO NOT MISS)….
The New York Strip is dry aged for 90 days – you’d struggle to get this anywhere else in the USA let alone Vegas!
My steak was hand selcected in the mid-west from the finest farm where the cattle are grass fed to begin and grain fed for 23 weeks.
The dry ageing is done here in Las Vegas – 90 days truly is exceptional!
Once brought to your table it is cut in front of your guests and lightly finished with sea salt from Essex, England. It is then given a light coating of olive oil from California.
The seasonal roast vegetables with cider black truffle went perfectly….
Carnevino also offers veal, pork and lamb dishes in addition to daily specials in the world of poultry and seafood.
The desserts are well presented and the Chocolate & Peanut Butter Torte
with peanut brittle & salted caramel was gorgeous. Top marks.
The gelato was the perfect way to end the meal….
